Blogging from Bed

Yes, it's Friday night before 9 pm and I'm in bed.  I'm not ready for bed exactly, I'm just avoiding the snacks downstairs.  Trader Joe's Dark Chocolate covered Almonds, in particular. 

Lil'T has not been sleeping well at all this week or last week.  Sometimes only 30 minutes a stretch.  So, this week's goals relating to sleep were a wash.  I thought that napping in the crib would help with him sleeping in the crib at night.  Sounds like a good theory, right?  Well, I'm giving it a shot...again next week.  He didn't come with an instruction manual. 

One item remains on my written 'To Do' list, but I hope to cross it (along with dusting and vacuuming) off tomorrow while T is around to entertain the Lil guy.  Sorry, there are not many pictures from this week's dinner items.  What I do have, I'll upload this weekend with updates.  I've been experimenting with healthy desserts this week.  T is not impressed.  I'm trying to sway him over to less sweet desserts, but the man eats a Hershey Bar nightly.  You'd never know it to look at him.  I'd be a barn if I ate that way. 

Time to wash up and unwind (i.e. surf the net and try to NOT worry about how cluttered the bedroom is...who lives here?).

Tubs on the run

I'm happy to report that my 'To-Do' list is being whittled away.  Well, I was making a dent until I added three items.  Oh well.

Since becoming a mom, I have given up on cleaning a room in its entirety in the same day.  No matter how small the room!  The bathtubs were in need of scrubbing.  I quickly cleaned Lil'T's while he played in his crib.  By playing, I mean, watching mommy through the rails.  To clean the adult tub, I brought the cleaner in the shower with me.  I scrubbed the walls after I bathed.  The tub itself had to wait until T returned home from work.  Yes, I'm proud of this accomplishment.

Do you ever try to hide something from yourself?  Out of sight, out of mind rarely works for me.  See for yourself...go check out that container of Cocoa Roasted Almonds.  Yum!  I know that sleeping poorly contributes to my unhealthy snacking and cravings, but I also eat when Lil'T cries.  Could he really be teething today?  We shall see.  He's 9 months old still rocking the toothless smile. 

A goal update:  One nap in the crib.  I slept in my own bed last night.  The only hitch is that Lil'T also slept in my bed.  Only from around 4ish until 7:30.  Hmm...tough.  Long run this morning.  I don't know the exact mileage because I forgot to start the GPS app, but I like to think I added some distance to this week's total.

Menu Monday

Another weekend behind us.  Boo.  It went by way too fast, and not much was actually accomplished.  I did write out a 'To Do' list for this week, so hopefully I will have a positive report for Friday. 

I actually spent a few days working on the menu.  No, it's not exciting.  I was just trying to maximize the food and minimize the spending since we spent extra on some weekend goodies.  The in-laws came over for football Sunday.  We served raw veg and pita chips with warm Buffalo Chicken Dip and Hummus.  They brought a thin crust veggie pizza.  My hunger outweighed my need to remove the mushrooms, so I gulped down a few.  Yuck!  I wish I liked mushrooms.  Sometimes.

Grilled Brats and Citrus Beet Cabbage Slaw
Quinoa Orange Ginger Salad (maybe with black beans?  I need to use up some fresh parsley)
Chili
Oven Roasted Chicken with Potatoes, Carrots, Onion, & something green
Kale and Sweet Potato Hash topped with Fried Eggs
Summer Squash Pasta

Some goals for the week:  Add mileage, Abs 3X week, Stretch, Eat less, Sleep in my own bed, put lines on my To Do list, and get Lil'T to nap in his crib.  Hmm...some toughies this week.  Wish me luck!

Summing up

I'm glad it's the weekend, but I'm sad that it is Saturday night already.  What's even more depressing is what our Saturday night consists of...me blogging, baby booking, catching up on photo orders, and probably cleaning the kitchen while the hubs changes his bike tires and watches college football.  You're jealous, I know.  Here's the run down:

Monday - We ran and hit up the grocery store.  Dinner was delicious!
Beans & Greens topped with Grilled Pork Chops


Tuesday - Ran.  Lil' T and I made it to book babies (which they've started calling 'Story Time'), a little late, but not the latest!  Afterward, we perused Target while I sipped a Skinny Vanilla Latte.  I proceeded to sweat profusely upon delicious, charged beverage consumption.  We purchased a few goodies from the dollar section and some CLIF bars.  It was probably the latte, because I randomly approached and spoke to a mom in the baby food section.  She was at book babies, so I thought I would make a little small talk.  How out of character??  Tuna Salad Wraps with raw carrots and celery for dinner.

Wednesday - Ran and Free Stroller Strides at Shelley Lake.  It was the grand opening at that location.  The SS instructor accused me of only attending Free classes.  I felt bad.  I felt like running to the car.  BUT, I stuck it out.  I even thought about purchasing a membership.  It's just that monthly fee that's holding me back.  After hanging out at the lake for a bit and feeding Lil'T, we headed home.  Upon reflection, I had a class pass during the last free week, so technically I haven't abused the free classes.  Oh well.  I'm over the guilt.  Dinner was a scrumptious tofu sandwich based on this recipe and raw veg on the side.

Thursday - Ran late in the sprinkles.  Lil'T and I stayed at home, venturing to the park for a few minutes on the swings.  An off menu dinner of Crustless Western Quiche.  I needed to use the ham, onion, and green peppers before they spoiled.  Peppers were on sale this week, and I went a little crazy.  A Bagel thin with cream cheese, carrots, and green peppers nearly every day for breakfast.


Friday - Ran and avoided errands because of random downpours.  Dinner featured the challenged ingredient:  sardines.  It was okay.  T really enjoyed it.  I had two portions of salad and a small portion of the pasta.  Edible.  Olive oil based sauces aren't my thing.

Which brings us to today.  A solo run (partially in the rain), followed by a little family outing (Babies R Us, Skinny Dip, All Star Bike, Grocery Store).  A quaint little Saturday, gearing up for football Sunday.  I thought tonight's dinner was tasty.  Spicy Chickpeas!  :-)

Hopefully, I can tackle something else on the 'To Do' list tomorrow.  Like, write down a 'To Do' list.  The one in my head just ain't cutting it.

Unfortunately, I was rather sucky at meeting last week's goals.  I'll have to set more attainable ones for next week.

Menu Monday

Great weekend in the mountains!  Always good to see the hubs sporting a tuxedo, even though he complains about it.  His feet were the only complaint this time.  The weather was cool, so he welcomed the layers.  After much debate, planning, and hoping we come in under budget this week, here's the menu (in no particular order):

Black Eyed Peas, Greens, and Pork
Tuna Salad Salad/Wraps
Pindi Chana (V)
Black Bean Sausage and Eggs (Brenner!) (V)
Pasta Con Sarde (**Ingredient Challenge:  Sardines)
Tofu Sandwiches (V)

With the exception of the Tuna Salad, it's an ALL new recipe week.  Fine...the BEP, Greens, and Pork doesn't really require a recipe, but it was inspired by a recipe I found. 

Stroller Strides is FREE all week!  Hope to take Lil' T to a session or two, run, stretch more, and enjoy some book babies.  :-)  Busy busy.

Overnight Oats

When I'm not eating Oat Bran Wafflins for breakfast, I'm eating oatmeal in some form.  I'm trying to stay away from cereal because my cereal portions are ridiculously out of control.  I can eat an entire box in two days!  It started when I was pregnant, and I've had a difficult time kicking the habit.  T only eats Grape Nuts, but I'm an equal opportunity cereal consumer.  I like it dry, on yogurt, with milk, between meals, for dinner, etc.  Get in my belly!  Since Lil'T started eating oatmeal and fruit nearly every morning, I thought I would try to do the same.  Lately, I make plain overnight oats to doctor up in the morning. 

Overnight Oats (2 servings)

1 TBL chia seed
2 TBL oat bran
3 TBL oats
3/4 cup non-dairy milk

Combine and refrigerate overnight. 

In the morning you have...





Now, I usually heat the overnight oats for 90 seconds then top:
Banana, raw oats, 1 tsp PB



Stir and enjoy!




So, not the most attractive breakfast, but satisfying.

Menu Monday

Another short week for the chef!  We are attending a wedding in the mountains this weekend and T has a team building dinner, so I won't be in the kitchen too much this week. 

M- Black Bean and Mango Salad
T- Spinach Sausage Pasta
W- BBQ Tofu Salad
Th - Soup, from a can
F- Rehearsal
S- Wedding!

Last night I made Oat Bran Wafflins (Muffin recipe 'baked' in the waffle iron because it's too hot to turn on the oven) and baby food (a tray of peas and a tray of carrots).  This is the third week in a row for the wafflins.  The toppings are the best part!  Some combos:

Cream Cheese and Pear
Cream Cheese and Banana
Peanut Butter and Banana
PB&J
Drizzled with Honey butter
Applesauce and craisins

Just pop the wafflin in the toaster, top, and enjoy!  I sprinkle Chia seeds on the CC and PB combos.




Goals for this week (besides cleaning and laundry):  RUN more, stretch, ab work, goodwill, book babies, and figure out what I'm going to wear to this wedding!!  I wish I could just borrow a dress and/or shoes.  Where's my personal shopper?  I just need someone to tell me what I can/should wear.  Is that too much to ask?  :-)

Still catching up...

I'm always behind.  Scatter-brained.  

A few weeks ago T challenged me to make something edible with radishes.  A google or two later and we were dining on this delicious Black Bean, Corn, and Radish Salad



What to do with the remaining radishes?  I ate two in my lunchtime salad.

This week's budget was busted early on!  I'm starting to think $100 per week is too little.  Went over by $22.  Our cupboards were painfully low.  Now they are stocked with all things evil i.e. processed, preserved, cheap eats.  I eat way too much as it is, now I am tempting my lack of will power with pop tarts and crackers.  Shame shame. 

Despite the lack of plum sauce needed to make Jerk Tofu, this week's menu was kept.  A quick substitution and we barely noticed the difference.  Yay!  We are eliminating the weekend meals of Chipotle Sweet Potatoes and Black Beans and whatever I was bringing to my sister-in-law's house.  Lil' T loves sweet potatoes, so there goes the extra taters I bought.  T loves Huevos Rancheros, so there goes the black beans.  I dried the cilantro for later use.  T used the limes in his beer.  Nothing wasted!  I just finished baking (and sampling) Chewy Low-Fat Banana Nut Cookies.  SIL requested I bring something sweet, and we had all the ingredients. 

After downing a "small" cookies 'n cream frozen yogurt at the mall tonight, I felt awful.  (So, it wasn't just THAT frozen yogurt.  Too many weekend indulgences.  I'll have to run extra tomorrow, just like I did today...frown.)  I requested that the next time I suggest such sugary delights, T enforce some restraint.  "Think again, Fatty."  He refused to say such a thing.  I have mixed feelings:  'Aw, he's sweet, loving and wants me to be happy,' and 'be a man, have a spine.'  I need someone to be strong, unfortunately that someone is me. 

*Note*  I don't usually follow recipes exactly, but I did with the Black Bean, Corn and Radish Salad.  I was scared.  The cookies, on the other hand, I added oat bran, more banana, and fewer nuts.

Rough start

We didn't leave for the beach until Saturday morning.  We had a pleasant, restful Friday evening.  The drive down was enjoyable.  Within an hour of arrival to our destination, T and I fought.  Had words.  Were unpleasant.  Why?  I have no clue.  I didn't want to hurt his feelings?  I didn't want to go to the beach.  I didn't feel like going through the whole sticky, greasy, sun screen lube station for a mere hour or two down on the sand.  Mind you, I'm white as a ghost and burn after 15 minutes of exposure.  Rather than letting him down and telling the truth, I was upset.  Needless to say, I'm at the house with a napping baby and T is enjoying the beach.  His most favorite place in the world.
