Black Bean and Chipotle Squash Burritos
Last week, the challenged ingredient was Low Sodium V8. I used it as a chili base, but what to do with the rest? Some went into tonight's Tempeh Sausage Pie. I'll work it into a Bloody Mary (non-alcoholic) salad dressing. It is the obvious choice, but the last recipe I found for Bloody Mary dressing called for tomato paste. The texture did not work for me!
Goals for the week: Run more, abs, stretch, sleep, and be a better Mom.
Lil'T had his 9 month well baby check up today (a week late). He's growth is tracking well. A relatively easy doctor's visit since there were no shots. But...he did pee all over the table. Always fun to clean up urine soaked paper and a squirmy 20 pound baby!
