Pumpkin Butter

On my last trip to Trader Joe's, I stocked up on canned organic pumpkin.  I was looking for their yummy pumpkin butter. 

Me:  Is your pumpkin butter in?
Sales Associate:  We'd be a lot busier if it was.  We're just starting to get seasonal selections.
Me:  Bummer.

As it turns out, not so much a bummer.  Last Sunday, I whipped up some pumpkin butter using a recipe I found online.  Unfortunately, I did not mark, save, or otherwise recall the recipe.  :-(  Of course it was delicious.  I'm hoping to stumble upon the recipe again.  It went something like:

1 15 ounce can pumpkin puree
1/2 cup water
1/2 cup brown sugar
cinnamon
allspice
ginger

Combine ingredients and bring to boil.  Simmer, stirring often for 40-50 minutes. 

On Monday, I was worried I would be throwing half the pumpkin butter away.  By Wednesday, I was worried that it would be gone before I could try out all the ideas rolling around in my head!  Not pictured, I ate cottage cheese, sliced pear and pumpkin butter.

Baked Oatmeal & Baked Oat Bran topped with Cream Cheese & PB

T does not like the "healthy" cookies.  He actually doesn't call them cookies at all, but they were intended to be cookies.  I eat them plain or topped.  T gobbled them up once I topped them with cream cheese and pumpkin butter. 

Baked Oatmeal (or Oat Bran) "Cookies"
1/3 cup oats
1 TBL whole wheat flour
1/4 tsp baking powder
3 TBL plain Greek yogurt
1-3 TBL milk (more for Oat Bran)

Combine and bake on prepared pan at 350 for 12-14 minutes.

I'm sure I will make pumpkin butter again this fall season, just not in the next week.
